Few things can complement and add nuance to a dish like the perfect amount of the right herb or spice at just the right time. In this course you'll learn how to identify a variety of fresh/ dry herbs and spices while discovering the best ways to accentuate your favourite recipes. Reclaim your spice cupboard and explore the cornucopia of flavour possibilities through dishes like Moroccan lentil soup, Thai curried chicken and vegetable samosas.

You are a serious home chef.

But, can you handle the heat of a professional kitchen?

Designed to challenge the best home chef, SAIT's Cooking Boot Camp is an intensive five-day culinary experience in our world-class commercial kitchens. Each day, you'll prepare a three-course lunch and dinner in our high-volume kitchens.

Think like a chef as you craft fine dining menu items, learn the art of professional plating, and carefully manage your time to serve your meals on a deadline. On the last day, you'll put your skills to the test as you create your own menu with mystery ingredients in an exciting black box challenge.

Cooking for Your Health (The Tastemarket)

Date: June 12-26 (Wednesdays)

Let us show you that healthy foods do taste good and are easy to incorporate into your meals with the proper planning. This three-part series will teach beginner cooks who are new to incorporating nutritious foods into their home kitchens, the basic nutrition and culinary skills they need to get cooking. We discuss how food reacts in the body, the benefits of eating real food, and how to start making nutritious choices. This is a demonstration course with a small hands on component each class which will give students confidence handling knives and preparing food for the week.

Each two-hour class will include a glass of wine and/or kombucha for each student.

Classes at the Calgary's Downtown Culinary Campus: Canning

Date: Saturday, August 24
Time: 9-3pm
Fee: $150 per person
Location: Culinary Campus

Learn how to preserve and enjoy your summer harvest all year long in this hands-on canning course. You'll learn the proper techniques to safely pickle and make jam from all the wonderful fruits and vegetables you picked or purchased during the summer season. Prepare preserved lemons, pickled beets, canned peaches, a savoury and sweet jam and salsa. All tools and jars will be provided.
