An introduction to the professional kitchen — designed for beginner cooks with a passion for food, this evening youth program starts with the basics: food safety and sanitation, knife skills, measuring and seasoning. Learn how to follow a recipe and take home your culinary creations to share with your family.

Available for youth entering Grades 7 through 12 in September. Essential skills include numeracy, reading and working with others.

Dress code requirements: All participants are required to wear closed-toe shoes with a good tread — no sandals or open-toe shoes permitted in the kitchens. Long pants are required to be worn in the kitchens — no shorts, capris or low-cut tops. Participants are not permitted to wear nail polish for the duration of this camp. Those with long hair should ensure they bring hair elastics to tie back their hair.

An introduction to the sweet world of professional baking. Designed for beginner bakers, learn baking fundamentals including measuring and scaling, kitchen safety and sanitation, and the science and chemistry behind your favourite treats.

This hands-on fine baking course introduces you to the basic steps and techniques of laminated dough production and how to make crispy, light, buttery croissants, delightful Danish pastries and rich traditional French brioche. Learn and practice dough lamination, how to make a variety of fillings for croissants and Danish pastries, and how to create a variety of sweet and savoury viennoiserie baked goods while exploring the multitude of applications for these doughs. By the end of the class you will have made 12 croissants, 12 Danish pastries and 12 brioche to take home.

Each student will learn and practice fermentation processes, dough mixing and shaping skills, depending on individual kneads, of course.
