Rosemary Cucumber Gin and Tonic

Taken from SAIT's 'Seasons' cookbook, enjoy this Gin and Tonic cocktail garnished with a sprig of rosemary and a refreshing slice of cucumber. This drink is perfect for spring entertaining.

Directions

Put ice in Highball glass. Add gin. Add Rosemary Syrup. Fill to top with tonic water.
Garnish with lime wheel, cucumber slice, rosemary sprig and serve.
Rosemary Syrup
Stir sugar and water together in a medium saucepan over medium-high heat. Bring to a boil, stirring occasionally, and boil 1 minute until all sugar is dissolved. Remove from heat.
Add 3 rosemary sprigs. Cover and let stand 10 minutes. Remove rosemary, cover and let the liquid cool. Pour liquid through a wire-mesh strainer into an airtight container. Cover and chill. Syrup may be stored in refrigerator up to 1 month.

1 oz Gin

1/2 oz Rosemary Syrup

tonic water

1 cucumber slice

Rosemary Syrup:

1 cup sugar

1 cup water

4 rosemary sprigs, fresh
