Savoury Granola

This recipe yields approximately 1 litre of granola to enjoy by itself or with other favourite foods.

Directions

Preheat oven to 360 C. Combine all of the dressing ingredients in a large bowl and whisk until combined.
Add all of the dry ingredients to the bowl. Use hands or a spatula to toss dry ingredients in the dressing until evenly coated.
Optional step: if you like your granola to stick together in big clusters, mix in the whipped egg whites into the already combined dressing and dry ingredients.
Spread granola into a single layer on a baking sheet lined with parchment paper.
Bake for about 20 minutes or until golden and crunchy. Gently stir granola halfway through baking to prevent it from burning.
Allow granola to cool completely and transfer to an air tight container. Keeps for up to 4 weeks at room temperature.

Ingredients

Dressing:

1/2 cup olive oil

2 Tbsp grainy mustard

1 Tbsp honey or maple syrup

1 zest from one lemon

2 Tbsp fresh thyme

1 tsp turmeric powder

2 tsp nutritional yeast

2 tsp sea salt

1 tsp chili flakes (optional)

Dry ingredients:

2 cups quick oats

1/2 cup buckwheat groats

1/2 cup pumpkin seeds

1/2 cup sunflower seeds

1/2 cup hazelnuts, roughly chopped

2 egg whites, whisked until foamy (optional)
