

Fruit & Nut Energy Truffles
Substitute the ingredients in this recipe for your favourite dried fruit and nuts. Then take this delicious snack on-the-go by portioning out individual snack bags.
Directions
- Add all ingredients except the coconut oil to a food processor and pulse until it forms a paste. Stop a few times while pulsing to scrape down the sides of the food processor with a spatula.
- Add the melted coconut oil and pulse again until well combined.
- Remove the mixture from the food processor into a clean bowl.
- Using your hands form small balls, squeezing and rolling until the ball sticks together.
- Store truffles in fridge or freezer and remove when ready to eat.

1 1/2 cups of dried apricots
1/2 cup cashews
1/4 cup ground flax seed
1/2 tsp vanilla extract
1/4 tsp sea salt
1 Tbsp coconut oil, melted
1/4 cup cocoa powder (optional)
