Learn how to preserve and enjoy your summer harvest all year long in this hands-on canning course. You'll learn the proper techniques to safely pickle and make jam from all the wonderful fruits and vegetables you picked or purchased during the summer season. Prepare preserved lemons, pickled beets, canned peaches, a savoury and sweet jam and salsa. All tools and jars will be provided.

Turkey Diner

Learn how to pull off the perfect turkey dinner in this hands-on class. Our chef instructor will go over brining, trussing and roasting a turkey; preparing sides like apple onion stuffing, brown butter rutabaga and cranberry sauce; and making classic pumpkin pie.

Sausage Making (SAIT Main Campus)

Learn the theory and practice of sausage making in SAIT’s state-of-the-art butchery and charcuterie lab. Theory covers sausage making, history, safety, techniques and non-meat ingredients. The hands-on portion includes grinding, mixing and stuffing sausages, in addition to handling and choosing meat. The instructor will also discuss fermented sausage, smoking and cooking. In this class, you’ll prepare one cured sausage (a fully cooked smokie) and two fresh sausages (chorizo and garden herb) to cook at home.

Bar Mixology (SAIT Main Campus)

This Bar Mixology course offers a tremendous opportunity to learn the art of bartending in a live classroom. Instruction takes place in the elegant Highwood dining room. You will learn all aspects of bar service, product knowledge and customer relations, and will prepare both classic and current cocktails with the opportunity to create your own unique beverages. There is a considerable focus on wine, wine service and food and wine pairing, with the awareness that wine is a growing segment of the beverage industry.

Special Notes:
During the practical component of this class, time is divided equally between bar service and table service in the Highwood Dining Room. Because of this, students must adhere to the Highwood's dress code (black dress pants, white shirt, black shoes and black socks). You will also need a waiter style corkscrew and the capacity for a lot of fun.
